Ah fresh peas… it's a real pleasure when I see it happen the lugs on the market stalls. First, because it's good to snack like this as reported Laurence but also because eating peas carrot is a real pleasure !!! And as the new potatoes are also seasonal, I wanted to offer a more complete and delicious version of.
Nothing very complicated, it's just a basic I wanted to cook and share with you as peas carrots we not all kept very good memories… But there, there are only vegetables that are crisp, to eat as is or accompanied by grilled meat.

Peas and carrots new potatoes
Ingredients (of 4 people)
- 600 g fresh peas (weight not shelled)
- 4 large carrots
- a dozen small new potatoes
- 1 net olive oil
- Salt and pepper
Peel the carrots and cut into small cubes.
Wash and cut potatoes into quarters or two.
Heat a little olive oil in a pan and add the carrots and potatoes cut. Cook over medium heat, covered 15 minutes gently stirring frequently.
Meanwhile shuck the peas and cook in salted boiling water 4-6 minutes then drain.
Increase the heat under the pan, check the cooking vegetables and add the peas. Cook about 2 minutes and season.
