Watermelon salad with herbs and grilled halloumi
Ingredients (of 4 people)
- 1/2 Watermelon
- 200 g halloumi cheese
- 150 g rocket
- 1 small bunch of mint
- 30 g pine nuts
- 1 net olive oil
- Salt and pepper
Expand the watermelon into quarters and cut triangles.
Mix arugula washed and coarsely chopped mint leaves.
Dry roast the pine nuts in a frying pan.
Serve the salad on a large platter by putting the first rocket, watermelon and pine nuts. Season with salt and pepper and a drizzle of olive oil.
Finally, cut slices of halloumi half a centimeter thick. Sauté 2 minutes per side in a pan with a drizzle of olive oil.
Add the warm halloumi over the salad and serve immediately.
