I find that does not enough cooking the celeriac, Bah yes because with that p'tit hairy bouille a little crooked, It was a bit tend to not notice on the stall of the market and leave it aside (little tear !). But this vegetable makes it us well when we want to lean on (Helen I am there !), because it is full of vitamins and is nevertheless very tasty !
I had already proposed a Celeriac soup, but this time it is a version of the very famous celery remoulade that I prepared. Good as it is a little classic and can - be even seen and re-seen, I've added a good small herbs that are parsley and tarragon, and I ' pepse’ (Yes a new Word !) with a dash of piment d'espelette.
And you know what it's pretty darn good celery remoulade !!!
Celery remoulade with herbs
Ingredients (of 4 people)
- 1 Celera rave
- 3 c. à s. of homemade mayonnaise (or not)
- 1/2 bouquet of parsley
- 1/2 bunch of tarragon
- 1 good pinch of Espelette
Cut the celeriac into julienne strips, Peel it and cut slices with a mandoline. Then cut these slices in thin sticks, put everything in a bowl.
Finely chop the parsley and tarragon and add celery.
Finally mix with mayonnaise and let cool 1 time so that celery is attendrisse a bit (You can also always try to give a hug !).
Add a little of Espelette pepper before serving.
Good salad !
