Before I didn't like fennel but it was before…! Before Celine speaks to me of a simple salad where you do marinate the fennel in the lemon that it lost its aniseed taste. And there was the revelation (and the dance of joy !) because fennel is now part of my basket of vegetables. And then, I wanted a little complicate things, and fun to marry him to the Arugula and feta cheese to make a salad all fresh, and I must confess to small summer notes !!!
A small salad of winter (Yes Yes I swear !) which I hope will seduce you !
Salad of winter, fennel, Arugula and feta
Ingredients (of 2 people)
- 1 bouquet of Arugula
- 2 small fennel
- The juice of one lemon
- 50 g made
- 40 g pine nuts
- A few sprigs of dill chiseled
- Of olive oil
- Salt and pepper
Cut the fennel very thinly using a mandoline and then turn them to marinate with a drizzle of olive oil and lemon juice during 15 minutes.
Wash the rocket and then mix with fennel and season with salt and pepper.
Finally add the feta coarsely cut, dill and pine nuts, then mix so that the feta a bit binds the sauce.
Good salad !
